Quince Thumbprint Cookies

INGREDIENTS

Makes 2 dozen

6 ounces butter

½ cup sugar

1 large egg yolk

1 ¾ cups all-purpose flour

¼ teaspoon salt

The Casa Market Quince Jam

Powdered sugar, for garnish

1. Preheat oven to 350 degrees.
2. Using a stand mixer, cream the butter and sugar until light and fluffy, about five minutes.
3. Add the egg yolk and mix until fully incorporated.
4. Meanwhile, combine the all-purpose flour and salt in a bowl and whisk well.
5. Add the dry ingredients to the butter and mix, just long enough to incorporate.
6. Using a small cookie scoop, scoop out mounds of dough and transfer to a cookie sheet.
7. Dip your thumb in cold water and gently press your finger into the center of the mound to create a well.
8. Fill the cavity with The Casa Market Quince Jam.
9. Bake for 10-15 minutes, just until the cookies begin to brown along the sides.
10. Cool on the baking sheet for five minutes before transferring to a cooling rack.
11. Sprinkle with powdered sugar before serving.
